Ingredients

  • 3 lb whole chicken
  • 3/4 c chicken stock
  • 1/2 t thyme
  • 1/2 t rosemary
  • 2 bay leaves
  • 1 lb potatoes
  • 2 med onions, cut into wedges
  • 1 c carrots, sliced 1/4 in thick
  • 1/2 c buttermilk
  • 1/4 c flour

Preparation

Step 1

In 3 qt casserole dish combine stock, thyme, rosemary and bay leaves. Add chicken. Arrange potatoes, onions and carrots around chicken. Cook 350, 1-1/4 hrs. Prepare gravy: skim fat from juices, remove leaves, measure 1 c into saucepan, combine buttermilk and flour and stir into juices. Cook til thickened and bubbly, stirring constantly. Spoon gravy over meat and veggies.
