Ingredients
- 2 potatoes
- 1 1/2 cups grated cheddar(sharp)
- 1 medium zucchini
- 1/4 bunch chives
- salt
- fresh ground pepper
- 1 egg
- 2 cups grated parmesan and panko bread crumbs mixed together
- Sauce-1 cup dijon mustard
- 1/4 cup honey

Preparation
Step 1
place potatoes in their skins in cool water-bring to boil and simmer until they can be pieced with a skewer, remove from water and cool
remove skin and grate on large holes and thru small holes grate zucchini-chop chives finely and add and then add salt and pepper to taste, along with egg. combine well and form into log, and cut into slices and roll in balls and then in bread crumb mixture
heat 1/2 in of oil in skillet and fry till golden brown and drain on paper towels
combine mustard and honey and use as dipping sauce
