Sweet Potato Crunch

  • 4 sweet potatoes
  • 1 1/2 C vanilla nonfat yogurt
  • 1/2 t pumpkin pie spice
  • 1 1/2 t kosher salt
  • 2/3 C low fat granola

Step 1

Wash sweet potatoes, place in oven and bake 350F 40-60 min or soft to touch. Remove skin after cooled. Place flesh in mixing bowl, add yogurt, pumpkin pie spice and salt. Whip on med until all yogurt is mixed into the potatoes. Coat baking dish (1.5 to 2 Q) with spray. Scoop in prepared potato mix. Sprinkle top with granola, spray lightly then bake at 350F for 40-50 min. Remove and serve.
