Ingredients

  • 1 small gala apple, cored, thinnly sliced
  • 2 1/2 cups lemon-lime drink
  • 2 cups white cranberry juice
  • 1 TBSP. crystallized lime, such as True Lime
  • 2 envelopes (.25 oz. each) + 1 tsp. unflavored gelatin
  • 12 oz. cream cheese, at room temperature
  • 1/4 cup sugar
  • 1 cup sour cream
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 4 packages (3 oz. each) cranberry-flavored gelatin mix
  • 2 cups boiling water
  • 1 cup ice-cold water
  • 1 cup red seedless grapes, chopped
  • Whipped cream, Champagne grapes, fresh cranberries and mint sprigs,

Step 1

Coat 10-cup mold with cooking spray. Arrange apple slices, overlapping, in bottom of mold, as shown.


Mix soft drink, 1 cup juice and lime. Transfer 1/2 cup mixture to 2-qt. microwave safe bowl; sprinkle 2 envelopes unflavored gelatin over mixture. Stir until blended; let stand until softened, 5 minutes. Microwave on high in 15-second intervals until dissolved.


Gradually stir remaining soft drink mixture into dissolved gelatin. Slowly pour 1/2 cup mixture over apples in mold. (Reserve remaining mixture at room temperature,) Place mold over bowl of ice water until set, 15-20 minutes. Slowly pour remaining mixture in mold; place over bowl of ice water until set, 20-30 minutes.

In 1 1/2 qt. microwave-safe bowl, sprinkle remaining 1 tsp. unflavored gelatin over 2 TBSP. water. Stir until blended; let stand until softened, 5 minutes. Microwave on high in 15-second intervals until dissolved; reserve.

On medium speed, beat cream cheese and sugar until smooth. On low, beat in sour cream and vanilla and almond extracts until smooth. Gradually stir cream cheese mixture into dissolved gelatin. Spread over apple layer in mold. Refrigerate until almost set, 15-20 minutes.

In large bowl, whisk cranberry gelatin mix into boiling water. Whisk in 1 cup cold water and remaining juice. Stir in grapes. Set over ice water; stir until thickened, 10-15 minutes. Spread in mold. Cover; refrigerate overnight.

To loosen, dip bottom of mold briefly in warm water. Place serving plate over top; invert onto plate. Remove mold. If desired, garnish with cream, fruit and mint.
