Baked Sweet Potatoes with Pears, Cranberries and Pecans

  • 8 sweet potatoes peeled and cooked
  • 1 cup dried cranberries
  • 4 T butter
  • 2 large pears peeled, cored and cut into pieces
  • 1 cup pecans may toast if desired
  • 4 t minced fresh ginger, may substitute dried or crystallized
  • 4 t brown sugar
  • 3 T balsamic vinegar
  • 1/2 t salt



Step 1

Cut precooked sweet potatoes into bite size pieces. Add rest of ingredients. Toss together. Bake at 350 for about 20 min.
