Creamy Goat Cheese Cups

Ingredients

  • 1 - 8 ounce log goat cheese, room temperature
  • 1 egg
  • 1/4 cup mayonnaise
  • 3 tablespoons chives, minced (half a package)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 packages phyllo cups

Preparation

Step 1

1.Preheat oven to 350
2.Beat goat cheese, mayonnaise and egg with a whisk or electric mixer until creamy. Mix in chives, salt and pepper.
3.Place phyllo cups on a baking sheet. Spoon the cheese mixture into the cups, making sure you don't overfill. Bake for 20 minutes until tops are slightly brown.
4.Cool 5 minutes before serving. Can be served warm or at room temperature.

Cooking Tip:
The easiest way to mince your chives is with kitchen scissors. Just snip them into the bowl.
