Ingredients
- 2 Tbsp canola oil
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- Juice of 1/2 lemon
- 8 oz fresh green beans, trimmed
- 1 cup fresh corn kernels
- 1 red bell pepper, cut into 1-inch pieces
Preparation
Step 1
Preheat grill to medium-high.
Whisk together oil, cumin, oregano, salt, black pepper, paprika, and lemon juice; toss with green beans, corn, and bell pepper.
Create a foil basket using a 36x18-inch foil sheet. Fold foil sheet to create a 12x18-inch basket, then turn edges upward. Place vegetables in foil basket.
Place foil basket on grill and cook vegetables until tender-crisp, stirring occasionally, about 10 minutes
