Linguine with Spicy Sausage & scallion Sauce

Ingredients

  • Time to Prepare: 35 min
  • 3/4 lb linguine
  • 4 scallions, cut in 1/2" lengths
  • 1/2 C parsley
  • 2 T pine nuts
  • 1/4 C + 1 T olive oil
  • 1/2 C Parmigiano cheese, grated
  • salt & pepper
  • 3/4 hot Italian sausage, casings removed

Preparation

Step 1

Cook pasta in salted boiling water til al dente. Drain, reserving 1 C pasta cooking water.
2. Meanwhile combine scallions, parsley, pine nuts & 1/4 C olive oil and process til pureed. Add 1/2 C cheese, season with salt & pepper & process til pesto is blended
3. In large skillet, heat 1 T olive oil. add sausage & cook over hi heat, breaking up the meat with a spoon, til lightly browned & no trace of pink remains, @ 5 min. Drain sausage & pour off any fat in skillet.
return sausage to skillet, add pesto, pasta & 3/4 c pasta cooking water; simmer over mod heat, tossing, til thick creamy sauce forms, @ 2 min.
Transfer to bowls with additional cheese
