Ingredients
- 3 sticks butter
- 2 cups granulated sugar
- 2 cups all purpose flour
- 2 tsp baking soda
- 3 tsp cinnamon
- 1 tsp salt
- 4 large eggs
- 1 tablespoon vanilla
- 3 cups grated carrots
Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour three 9inch cake pans. In large bowl, cream the butter for 5 minutes until light in color. Add sugar and beat until well mixed. In medium bowl, combine flour, baking soda, cinnamon and salt. Alternate adding the dry ingredients and eggs to the butter mixture. Once all mixed, add vanilla and mix. Add carrots and beat for 2 minutes. Divide batter between 3 cake pans. Cook 25-30 minutes until toothpick comes out clean. Place on rack and let cool for 10 minutes. Remove from pan onto rack and let cool completely before frosting.
