Ingredients

  • 1 Large Head of Cauliflower, cut into bite size pieces
  • 8 strips bacon, cooked and crumbled (cooked in oven at 400 for 20 min)
  • 1 small onion, chopped
  • 6 tbsp chopped green onion tops
  • 1/2 cup Mayonnaise
  • 1/2 cup sour cream
  • 2 cups cheddar cheese

Preparation

Step 1

Preheat oven to 425
Boil cauliflower for 8 - 10 minutes, drain and let cool
Fry bacon pieces, and onion and continue frying
In a large bowl, combine sour cream, mayo, 1/2 bacon and onion, green onion, 1 cup cheese and cauliflower, and mix well.
Place in baking dish and cover with remaining 1 cup cheese and bacon mixture.
Bake for 15 to 20 minutes until cheese is melted.
