Ingredients
- 5-6 oz mild, creamy goat cheese or cream cheese at room temp
- 2 T chopped parsley
- 1/4 t black pepper
- 2 plum tomatoes, seeded and diced
- 3 T olive oil
- 1/8 t salt
- 1 loaf Italian bread
- 2 cloves garlic halved
Preparation
Step 1
Preheat oven to 400.
In a small bowl, stir together the cheese, 1 T parsley and pepper until thoroughly combined. In a medium bowl, stir together the tomatoes, 2 T olive oil, salt and 1/2 T parsley.
Slice off and discard the ends of the bread. (eat them)Cut the bread into 1/2 in thick slices and place on a baking sheet. Toast in oven until golden brown, about 5 min. Rub 1 side of each toast with cut side of garlic. Brush with remaining olive oil.
Just before serving, spread the slices with cheese mixture and top with tomato mixture. Sprinkle with the rest of the parsley.
