Fennel Slaw with Grapefruit, cracked pepper & pistachios

Ingredients

  • 3 T EVOO + more for drizzling
  • 1 1/2 T white wine vinegar
  • 2 fennel bulbs, halved lengthwise & very thinly sliced
  • 1/3 C shelled pistachios, lightly toasted & coarsely chopped
  • Sea salt & coarsely cracked pepper
  • 1 large pink grapefruit

Preparation

Step 1

In large bowl, whisk oil with vinegar. Add fennel & 1/2 of nuts. Finely chop reserved fonds & add to bowl along with 1/2 t salt & pinch of pepper. Toss to coat
Peel grapefruit and remove white pith and release fruit from membrane. Add to fennel; Toss gently & season with salt. Top with remaining fronds, pistachios, cracked pepper & serve
