Cream of Mushroom Soup

Ingredients

  • 2 medium chopped onions
  • 3 stalks of chopped celery
  • 4 chopped garlic cloves
  • 45 ounces chicken broth
  • 2 cups cream
  • 1/2 teaspoon thyme
  • 1/2 teaspoon parsley
  • 1/2 stick butter
  • 1 package sliced button mushrooms
  • 1 package sliced shitake mushrooms
  • 2 large sliced portabella mushrooms
  • salt to taste
  • 1/4 cup instant flour or cornstarch nd 1/4 cup water, made into a slurry.

Preparation

Step 1

In a large soup pot, in some extra butter, saute the onions, all mushrooms, celery and garlic until soft. Add chicken stock and spices cook until all are done. Add butter, cream, slurry mixture and spices. Cook about 20 minutes.
