Chicken with feta cheese sauce

A light feta cheese sauce on chicken breasts is delicious. Quick and easy to make.

Ingredients

  • 4 boneless chicken breasts
  • 4 teas flour
  • 1-12 oz evaporated milk
  • 1 T butter
  • 2-3 T fresh chives, chopped
  • 1 c feta cheese
  • salt
  • pepper
  • olive oil

Preparation

Step 1

Heat skillet over medium-high heat. Lightly coat chicken breast with olive oil. Sprinkle with salt and pepper. Add chicken to pan when hot and cook 4-5 minutes per side until cooked through. Remove from heat and keep warm. Melt butter in saucepan over medium heat. Add flour and whisk constantly for one minute. Gradually add milk, stirring constantly. Stir in chives and reduce heat to medium-low. Simmer 5-7 minutes or until thick. Add cheese and stir until cheese is melted. Spoon sauce over chicken.
