Baked Oatmeal

Ingredients

  • 1 1/2 Cups skim milk
  • 1 egg
  • 1/2 Cup plain yogurt or unsweetened applesauce
  • 1 tsp. PURE VANILLA EXTRACT
  • 2 TBSP firmly packed brown sugar
  • 3 Cups quick cooking oats or regular
  • 2 tsp. CINNAMON
  • 1/2 tsp. salt
  • 2 Cups mixed berries, fresh or frozen(raspberries, blackberries and blueberries etc.)

Preparation

Step 1

Preheat oven to 350°. Spray an 8-inch glass baking dish with cooking spray. In a large bowl, combine all ingredients except the fruit. Mix well. Add 3/4 of the mix into the baking dish. Evenly layer the berries on top of the oatmeal mixture. Layer the remaining oatmeal mixture on top of the berries. Bake at 350° for 30 minutes or until the top starts to brown and the oatmeal is bubbling.
