Chili Verde con Puerco (Bill Bair)

Ingredients

  • 4 lbs. boned cubed pork shoulder (2" cubes)
  • 12-15 chopped Jalapenos or 10-12 chopped Serranos (adjust heat to your liking) This is HOT!
  • 1 heaping T. Minced Garlic
  • 1 heaping T. Ground Cumin
  • 1/2 chopped yellow onion
  • 6 tomatillos chopped
  • A big handful of fresh chopped cilantro leaves
  • Juice from a lime
  • Salt and Pepper to taste

Preparation

Step 1

Mix all together in a 6qt crockpot and cook on LOW for at least 8 hours. OR - 4 hrs in Dutch oven at 325.

Serve with tortillas.

We use it to make burritos, and pour red beany chili over the top, and cover with cheese. Killer burritos! Enjoy!
