Zucchini Bread

Ingredients

  • 3 eggs, beaten
  • 1 C. oil
  • 2 C. sugar
  • 2 C. grated zucchini (about 2-3 medium zucchini)
  • 2 t. vanilla
  • 3 C. sifted flour
  • 1 t. baking soda
  • 1/2 t. baking powder
  • 1 t. salt
  • 1 t. cinnamon (heaping)
  • 1/2 C. chopped nuts

Preparation

Step 1

1) Preheat oven to 325.
2) Spray two 1-lb. loaf pans with Pam.
3) Beat eggs, then add oil, sugar, zucchini and vanilla. Cream all together.
4) In a separate bowl, sift together the dry ingredients. Add to creamed mixture until well blended.
5) Add nuts. Divide evenly among the two pans and bake 1 - 1 1/2 hours.
