Pumpkin Roll

Ingredients
- 3 eggs
- 1 cup sugar
- 3/4 cup pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup nuts -- optional
- 1 cup powdered sugar
- 8 ounces cream cheese -- softened
- 1/4 cup butter -- softened
- 1 teaspoon vanilla

Preparation
Step 1
*Beat eggs at high speed 5 minutes, Gradually add sugar, pumpkin, and
lemon juice set aside
*Mix together all dry ingredients accept the nuts,Gradually add to egg
mixture, mix well
*Grease and flour 10x15 jelly roll pan
spread mixture in pan, top with nuts if desired
*Bake at 375 for 15 minutes
Quickly turn over onto a lint free tea towel, sprinkle with powder sugar
roll up with tea towel , let cool completely
FILLING
*Cream together Powdered sugar, cream cheese, butter, and vanilla well
until smooth
*Unroll Pumpkin roll a little bit at a time and spread cream cheese
filling until covered
*Roll pumpkin roll back up and refrigerate, sprinkle with powder sugar
when serving
