Marinated Beef Roast

Ingredients

  • 3 lb beef chuck pot roast, cut 2 in thick
  • 4 green onions
  • 1/4 c soy sauce
  • 1/4 c vinegar
  • 2 T water
  • 2 T honey
  • 1 t ground ginger
  • 1 garlic clove
  • 1/4 c cold water
  • 1 T cornstarch

Step 1

Trim fat off roast. Pierce meat on both sides with fork. Place meat and onions in plastic bag. Stir together soy sauce, vinegar, 2 T water, honey, ginger and garlic. Pour over meat in bag. Marinate several hours or overnight in refrigerator, turning occasionally. Remove meat, onions and marinade from bag and place in baking dish. Bake 325, 25 min or til meat is tender. Remove meat from dish, skim fat. Measure 1 c juices. Place meat back in dish and cook 5-10 min more. Stir together cold water and cornstarch and aadd to juices. Cook in saucepan til thickened and bubbly, stirring constantly. Serve with marinade on top, pass remaining marinade.
