Ingredients

  • Crust:

  • ½

    c butter

  • ¼

    c shortening

  • ½

    c sugar

  • 2

    c flour

  • ¼

    t salt

  • Filling:

  • 1

    c sugar

  • 3

    T flour

  • 2

    eggs, beaten

  • ¾

    c water

  • 1

    T lemon rind, grated

  • ¼

    c lemon juice

  • 2

    T butter

  • Glaze:

  • ½

    c conf sugar

  • 1

    T milk

Directions

Prepare crust. Reserve one cup. Press into 13x9 pan. Bake 375, 12-15 min. Prepare filling: combine sugar and flour in saucepan, stir in remaining stuff. Cook over med heat stirring constantly til very thick. Spread over crust, sprinkle w/ reserved crust mix. Bake 20-25 min. Drizzle with glaze.
