Ingredients
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 8 ounces cream cheese, at room temperature
- 1 (7-ounce) jar pimentos, diced, or 1/2 roasted red pepper, peeled and diced
- 2 tablespoons Spanish sherry vinegar
- Salt, to taste
