  • 4 small peppers
  • 2 slices bacon
  • 1/2 c onion
  • 1 T butter
  • 2 t parsley
  • 1/2 t basil
  • 2 T Parmesan cheese
  • 1 c cooked corn
  • 1/3 c bread crumbs
  • s&p

Preparation

Step 1

Cut off tops of peppers, hollow out centers. Place in casserole dish. For filling: cook bacon, crumble, set aside. In saute pan cook onion, butter, parsley and basil til tender. Stir in cheese, corn, bacon and crumbs. Spoon filling into peppers. Cook 325, 20 min.
