Cranberry Coffee Cake

Ingredients

  • Glaze:
  • 1/2 cup butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1-1/2 tsp. almond extract
  • 1 tsp. vanilla
  • 2 cups plain flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup sour cream
  • 1 cup whole berry cranberry sauce
  • 1 cup sifted powdered sugar
  • 2 tbsp. milk
  • 1/2 tsp. almond extract

Preparation

Step 1

Preheat oven to 350 degrees. For cake, cream butter and sugar in a large bowl. Beat in eggs and extracts until well blended. In another bowl, combine flour, baking powder, baking soda and salt. Add flour mixture to creamed mixture, alternating with sour cream. Pour half of batter into a greased 9" tube pan. Spoon cranberry sauce over top of batter. Top with remaining batter. Bake 55 -60 minutes or until a toothpick inserted in center of cake comes out clean. Cool in pan 10 minutes. Remove from pan.

For glaze:
Combine all ingredients in a small bowl, blending well. Drizzle over warm cake.
