Cheesy Squash Casserole

Ingredients

  • 4 large zucchini, thinly sliced
  • 4 large yellow squash, thinly sliced
  • 1 onion, chopped
  • 1/2 cup butter
  • 1 can cream of chicken soup
  • 1 (8 oz.) package shredded Cheddar cheese
  • 1 (8 oz.) packaged shredded mozzarella cheese
  • 1 cup sour cream
  • 1 (6 oz.) box savory herb stuffing mix (We used Stove Top)
  • 1/2 t. black pepper
  • 1/4 t. salt

Preparation

Step 1

1. Preheat oven to 350. Spray a 3 1/2 qt. baking dish with Pam.
2. In a large Dutch oven, combine zucchini, squash, onion, and water to cover. Bring to a boil over medium-high heat; reduce heat, and simmer for 10 minutes or until squash is very tender. Drain well.
3. Add butter to squash mixture, stirring until butter melts. Add soup, cheeses, sour cream, stuffing mix, pepper, and salt, stirring to combine. Spoon ixture into prepared baking dish, and bake for 30 to 40 minutes or until hot and bubbly.
