Turkey Meatballs and Veggie Rice

Ingredients

  • Meatballs:
  • 1 lb ground turkey
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 2 green onions - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon red pepper flakes
  • 1/2 cup bread crumbs
  • 1 tablespoon vegetable oil
  • Rice:
  • 1 1/2 cups rice (3 cups cooked)
  • 1 carrot - finely chopped or food processed
  • 1 cup broccoli pieces - finely chopped or
  • food processed
  • 1 large lemon - juiced
  • 1/2 cup chicken broth
  • Salt - to taste

Preparation

Step 1

1) Start rice cooking. Preheat oven 450. Meanwhile, start meatballs.
2) Combine turkey with all remaining meatball ingredients. Form 12 balls. Heat a large skillet with oil.
Brown meatballs well on all sides. Place meatballs in a large baking dish and bake in oven for 10
minutes to finish cooking.
3) Once rice is cooked. Stir broccoli and carrots into hot rice. Stir in lemon juice, broth and salt. Cover
with lid until ready to serve.
4) Remove meatballs from oven and serve over rice.
