Ingredients

  • 1 c. onion, sliced (preferably 2-inch long green onion slices)
  • 2 tbsp. butter
  • 2 c. chicken, cooked & diced
  • 2 c. chicken broth
  • 2 c. celery, sliced
  • 1 can sliced water chestnuts, drained
  • 1/2 c. water
  • 3 tbsp. soy sauce
  • 3/4 tsp. ground ginger
  • 1/4 c. cornstarch
  • 1 lb. bean sprouts (fresh better)

Preparation

Step 1

In large pan, saute onion in butter until tender but not brown. Add chicken, chicken broth, celery and water chestnuts. Heat to boiling. Combine water, soy sauce, ground ginger and cornstarch. Stir into chicken mixture. Cook and stir until thick and bubbly. Add bean sprouts and heat through. Serve over rice. Sprinkle with toasted slivered almonds, if desired. Makes 4 to 6 servings.
