Nanaimo Bars

Ingredients

  • Base:
  • 1/2 cup butter
  • 1/4 cup sugar
  • 5 tbsp cocoa powder
  • 1 tsp vanilla
  • 1 egg
  • 1 cup coconut
  • 2 cups graham wafer crumbs
  • 1/2 cup walnuts
  • Icing:
  • 1/4 cup butter
  • 3 tbsp milk
  • 2 tbsp vanilla custard powder
  • 2 cups icing sugar
  • Topping:
  • 4 squares semi-sweet chocolate
  • 1 tbsp butter + 1 tsp olive oil

Preparation

Step 1

Base:
Place butter, sugar, cocoa and vanilla in a microwave safe bowl. Microwave for 45 seconds on high or until butter is melted. Stir in egg and continue stirring until the mixture resembles thin custard. In a separate bowl, combine coconut, graham wafer crumbs and nuts, blending well. Add to custard mixture. Pack evenly in a 9”x9” pan.

Icing:
In a bowl, combine the milk and vanilla custard powder. Cream in the ¼ cup butter. Blend in the icing sugar. Spread over the chocolate base, let stand in the fridge about 15 minutes to harden somewhat.

Topping:
Melt the semi-sweet with the butter and olive oil and spread over the custard icing. When set cut into squares.

Note:
Very good when the Icing and Topping are doubled.

To cut, warm at RT for a few minutes and cut the chocolate layer. Then it starts to warm too much, put back in the fridge to harden before cutting the bottom layer.
