Strawberries and Cream bread pudding

Ingredients

  • 2 Tbs butter, melted
  • 7oz day old bread cut into cubes
  • 3/4 C. shopped fresh strawberries
  • 1 /14 C. milk
  • 3/4 C. light cream (half n half)
  • 1/4 C. strawberry preserves
  • 3/4 C. sugar
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 350*
Toss bread with the chopped strawberries, place into the greased pan. Beat the eggs, milk, cream, strawberry preserves, sugar and vanilla in a medium bowl until frothy. Pour over the bread and lightly press down with a spatula until the bread has absorbed the milk mixture.
Bake 40-45 minutes or until the top springs back when lightly tapped.
Serve with fresh strawberry sauce if desired.
