Ingredients
- 3 T butter ot margarine (may use low fat)
- 3 T flour
- 3/4 C milk
- 1/2 C finely chopped, cooked, well drained veggies (spinach, broccoli, carrots, asparagus, green beans)
- 1/2 tsp salt
- 3 egg yolks
- 3 egg whites + pinch of salt + 1/8 tsp cream of tartar, stiffly beaten
Preparation
Step 1
1. Melt butter in saucepan
2. Mix flour, salt and milk in shakeable container and shake until well combined
3. Stir into melted butter and cook until thick and bubbly
4. Stir in veggies and egg yolks
5. Fold in egg whites
6. Pour into ungreased 1 qt souffle dish and bake at 350° 30 - 35 min. until puffed and golden; serve immediately
