Cheese Souffle

Ingredients

  • 3 T butter or margarine (may use low fat)
  • 3 T flour
  • 3/4 C milk
  • 1 C (4 oz) single type of cheese like cheddar or combination of cheeses like mozarella, parmesian, asiago, romano
  • 3 egg yolks
  • 3 egg whites + pinch of salt + 1/8 tsp cream of tartar, stiffly beaten

Preparation

Step 1

1. Melt butter in saucepan
2. Shake milk and flour together in container until well mixed; add gradually to melted butter and cook until thick and bubbly
3. Take off heat; stir in cheese until it melts
4. Stir in egg yolks; fold in egg whites and pour into 1 qt. ungreased souffle dish
5. Bake at 350° 30 - 35 min till puffed and brown; serve immediately
