Golden Chicken Breast

Ingredients

  • 1 stick butter
  • 4 boneless, skinless chicken breasts
  • 1 T. olive oil
  • 2 cups fine-grated croutons
  • 1 cup flour
  • 2 eggs, beaten well
  • 1 T. crushed rosemary
  • 2 T. water
  • 3 T. grated Parmesan cheese

Preparation

Step 1

In a large, heavy skillet, heat butter and olive oil over low heat. In a separate bowl, combine flour, rosemary, and cheese and mix well. Dampen chicken breast. Roll in flour mixture, then eggs, then croutons. Cook in butter four minutes per side. Drain on paper towels.
