Ingredients

  • 1.5 c raw cashews
  • 1.5 c raw pecans
  • 1 c raw almonds
  • 2 T + 2t turbinado sugar, divided
  • 2 t sea salt, divided
  • 2 t coarsely chopped rosemary
  • 1/2 t cayenne pepper
  • 1/8 t smoked paprika
  • 1 T honey
  • 1 T unsulphured molasses
  • 1/2 t grated orange zest

Preparation

Step 1

1. Preheat oven to 325F. Line a lg rimmed baking sheet w/parchment paper.
2. In a lg bowl, combine cashews, pecans, almonds, 2T sugar, 1.5t salt, rosemary, cayenne, & paprika.
3. In a microwave-safe bowl, combine honey, molasses, & orange zest; microwave on high for 10 sec.
4. Pour hot honey mixture over nuts & stir to coat.
5. Spread nuts on prepared baking sheet in a single layer & sprinkle w/remaining 2t sugar & 1/2t salt.
6. Bake in center of oven w/o stirring for 30-35 min., until nuts are lightly browned & sugar is caramelized (nuts will harden as they cool).
7. Let cool completely, about 1 hour.
8. Break nuts apart & transfer to a serving bowl. Nuts will keep in an airtight container for 2 days.
