Apple-Cream Cheese Coffeecake

Ingredients

  • 1/2 cup. brown sugar
  • 1/4 cup. margarine, softened
  • 1 egg
  • 2 egg whites
  • 1/2 cup. plain low-fat yogurt
  • 1/2 cup. unsweetened applesauce
  • 1 3/4 cups. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 4 oz. light cream cheese , softened
  • 1 1/2 Tbs. skim milk
  • 1 1/2 cups. peeled, chopped Granny Smith apples
  • 1/4 cup. brown sugar

Preparation

Step 1

Combine 1/2 cup. brown sugar and margarine at med. speed of an electric mixer until light and fluffy. Add egg whites, and beat well.

Combine yogurt and applesauce. Combine flour and next 3 ingredients; add to creamed mixture alternately with yogurt mixture, beginning and ending with flour mixture. Mix well after each addition.

Reserve 1 cup batter, and set aside. Combine cream cheese and milk, stirring with a wire whisk until smooth.
Pour remaining batter into a 9-inch square baking pan coated with cooking spray. Spoon cream cheese mixture over batter. Top with 1 cup chopped apple. Pour 1 cup reserved batter over apple; top with remaining 1/2 cup apple. Sprinkle with 1/4 cup brown sugar.

Bake at 350* for 55 mins. or until toothpick come out clean. Cool in pan on a wire rack.
