Ingredients
- 2 yellow onions, sliced thinly
- 4 ounces brandy or bourbon
- 2 gallons cold water
- 3 bay leaves
- 10 black peppercorns
- 1/2 cup kosher salt
- 2 ounces corn oil
Preparation
Step 1
Saute onions until tranlucent; remove from heat and add liquor. Return to burner and reduce by half. Add remaining ingredients and cool in refrigerator until you are ready to marinate turkey the evening before cooking.
