Ingredients
- 1 cup packed brown sugar
- 1 cup cooked or canned pumpkin
- 1/2 cup oil
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1 tsp vanilla
- Raisins, optional
- Chocolate chips, optional
- Chopped nuts, optional
Preparation
Step 1
Preheat oven to 350 F.
In a mixing bowl, beat together sugar, pumpkin, oil and vanilla. Sift together dry ingredients and add to mixture. Stir until smooth. Blend in raisins, nuts, or chocolate chips. Drop by teaspoonfuls on greased baking sheet. Bake for 12 to 15 minutes.
