Ingredients

  • 15 lbs. shrimp, peeled
  • 2 c. butter, divided
  • 5 garlic cloves, minced
  • 4 1/2 c. heavy cream
  • 3 c. grated Parmesan cheese
  • 4 c. grated Mozzarella cheese
  • 6 T. Paul Prudhomme’s Magic Seasoning (no substitute)
  • 2 boxes penne pasta, cooked and drained

Preparation

Step 1

Melt 1 cup of the butter in a large saucepan over medium high heat. Add the shrimp and season with 2 tablespoons of Paul Prudhomme’s. Cook until done. Remove the shrimp and ½ of the juice and put in a large bowl. Set aside. Pour out the remaining shrimp juice and put the remaining two sticks of butter in the saucepan. Add the garlic and sauté for about one minute. Add cream, remaining 3 tablespoons Paul Prudhomme’s and bring to a simmer. Stir often. Add the parmesan cheese and simmer sauce until it’s thickened and smooth. When sauce has thickened add the mozzarella cheese and stir until smooth. STIR FREQUENTLY. While the sauce cooks, boil the pasta.
