Ingredients

  • Cake Layer:
  • 1/2 Cup Butter, softened
  • 1 Cup Sugar
  • 2 Eggs
  • 1/2 Cup Flour
  • 2 (1 oz.) Squares Unsweetened Chocolate, melted
  • 1/2 Cup Chopped Pecans
  • Peppermint Filling:
  • 1 Tbs. Butter, softened
  • 1 Cup Powdered Sugar
  • 2 Tbs. Creame de Menthe
  • Chocolate Glaze:
  • 2 (1 oz.) Squares Semi-sweet Chocolate
  • 1 Tbs. Butter

Step 1

Cake Layer: Cream butter and sugar until light and fluffy. Add eggs and beat thoroughly. Add flour and blend well. Add chocolate, blending thoroughly; stir in pecans. Pour into greased 9 x 9 inch pan. Bake at 350 degrees for 20 minutes.
Peppermint Filling:
Blend butter and sugar. Stir in creme de menthe until of spreading consistency. Spread over cake layer. Chill. (Okay to double sugar and butter for thicker filing.)
Chocolate Glaze:
Melt chocolate and butter, stirring well. Spread on cold peppermint filling. Chill; cut into 1 inch squares. Store in refrigerator. Yields 4 dozen.
