Apricot Rice

Ingredients

  • 2 cups short grain brown rice
  • 1/2 - 1 cup dried apricots
  • water to cover
  • 1 cinnamon stick
  • 3-4 Tbsp milled cane sugar
  • 1/2 tsp salt
  • soymilk to serve

Preparation

Step 1

1. Cut apricots into pieces and soak overnight.

2. Place rice and apricots, including apricot soaking water, in a pot.

3. Add the cinnamon stick and enough water to cover, and boil until rice is soft and creamy, about 40-50 mins. Add more water while cooking if necessary.

4. Serve warm or cold with soymilk. Make a light supper if eaten with a whole grain sandwich.
