Pulled Pork Tacos

Ingredients

  • yields 4 servings (8 tacos total)
  • + 1 lb lean pork tenderloin
  • + 15 oz can tomato sauce
  • + 1 Tbs chili powder
  • + 1 Tbs ground cumin
  • + 1 1/2 Tbs brown sugar
  • + 1 tsp crushed red pepper
  • + 2 Tbs minced garlic
  • + dash of salt
  • + 8 corn tortillas

Preparation

Step 1

Trim tenderloin visible of all fat and place in crockpot. Combine tomato sauce and all spices in bowl mixing them together well. Once mixed, pour sauce mixture over tenderloin. Turn crockpot on low and cook for 8-9 hours.

Once pork is cooked, shred with two forks and mix with sauce again. 1 serving yields 3/4 cup of meat mixture. (The pork alone has a PPV of 4 per serving.) After placing in tortillas, top with lettuce, salsa and whatever else you prefer on your tacos. ENJOY!
