Ingredients

  • 1 large can peaches (No 2 1/2 size) or fresh sliced fruit to cover pan
  • 1 tsp cinnamon
  • 1 tbsp. lemon juice
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 tbsp. butter
  • 1 1/4 cup sugar
  • 1/2 cup milk
  • 1 tbsp. cornstarch
  • 1 cup boiling water

Preparation

Step 1

Grease a 9" square baking pan. Line bottom with peaches and juice.
Sprinkle with cinnamon and lemon juice.
Sift together flour, baking powder and salt.
Cream the butter, add 3/4 cup of the sugar gradually, beating until fluffy.
Add dry ingredients alternately with milk.
Spread batter over peaches.
Combine remaining 1/2 cup sugar with cornstarch. Sprinkle over batter.

Pour the boiling water very slowly over the entire mixture. Bake at 350 for one hour.
