Puerto Rican Style Corn Beef

Ingredients

  • 1 can corned beef
  • 1/2 cup stuffed Spanish green olives
  • 2 garlic cloves, minced
  • 1 8 ounce can tomato sauce
  • 1/2 cup water
  • 2 sprigs cilantro (Chinese parsley)
  • 1/2 medium white onion, diced
  • 2 tablespoons sofrito
  • 2 medium potatoes, peeled and diced
  • 1 envelope Goya Sazon seasoning
  • 1 red pepper or jarred roasted peppers (pimiento), diced

Preparation

Step 1

In a large skillet over medium-high heat, add 2 tablespoons olive oil and onions. Saute onions until transluscent about 2 minutes. Add remaining ingredients except corned beef and water. Let simmer for about 5 minutes on lower heat. Add corned beef and water. Cook on low heat about 20 minutes or until potatoes are tender.
