Sweet Potatoe Casserole

Ingredients

• 4 Large sweet potatoes
• 1/2 C brown sugar
• 1/3 C milk
• 3 Eggs beaten
• 1/4 C butter softened
• 1 t vanilla
• 1/4 t salt
• 1 C marshmallows

Preparation

Step 1

Preheat oven to 350 degrees
Peel potatoes and cook til done approx 20 minutes
Drain. Put in bowl and beat with brown sugar, milk eggs, butter, vanilla and salt. Put in baking dish and bake until puffed about 1 hour
Position oven rack about 4 inches from hat and put marshmallows on top and broil for 30-60 seconds.
