Ingredients

  • 3 TBSP butter
  • 1/2 cup diced red onions
  • 4 cups shredded potatoes
  • 1 1/2 cups slivered ham
  • 1 1/2 cups shredded cheese; colby, jack, cheddar
  • 1 cup finely diced green chiles, roasted, skinned and seeded
  • 8 eggs, beaten
  • 1 1/2 cups heavy cream
  • 1/2 tsp freshly ground pepper

Preparation

Step 1

Melt butter and cook onions until tender. Mix cooked onions, potatoes, ham, chiles, and cheese together. Spread in a 13x9 inch butter baking dish. Beat together eggs, cream and pepper and pour over the potato mix. Bake for 45-50 minutes, or until a knife in the middle comes out clean.
