Ingredients

    TBSP butter

  • ½

    cup diced red onions

  • 4

    cups shredded potatoes

  • cups slivered ham

  • cups shredded cheese; colby, jack, cheddar

  • 1

    cup finely diced green chiles, roasted, skinned and seeded

  • 8

    eggs, beaten

  • cups heavy cream

  • ½

    tsp freshly ground pepper

Directions

Melt butter and cook onions until tender. Mix cooked onions, potatoes, ham, chiles, and cheese together. Spread in a 13x9 inch butter baking dish. Beat together eggs, cream and pepper and pour over the potato mix. Bake for 45-50 minutes, or until a knife in the middle comes out clean.
