Ingredients
- 1/2 cup light soy sauce
- 2 T brown sugar (or granulated brown sugar substitute)
- 2 T sugar (or sugar substitute)
- 4 cloves garlic, pressed
- 1 1/2 lbs sirloin steak, 1 1/2" thick, cut into 1" pieces
- 1/2 cup creamy unsweetened natural peanut butter
- 3/4 cup water
- 3 T lime juice
- 1 T finely chopped ginger
- 1/4 tsp ground red pepper
- 1 green bell pepper, cut into squares
- 1 red bell pepper, cut into squares
- 1 large onion, cut into wedges
Preparation
Step 1
In a shallow dish, combine 1/2 the soy sauce, 1 T brown sugar, 1 T sugar, and 1/2 the garlic. Add the steak and stir to coat. Let stand for 20 minutes, stirring once.
Meanwhile, in a saucepan, combine the peanut butter, water, lime juice, ginger, ground red pepper, and the remaining, soy sauce, sugars, and garlic. Coo, stirring constantly, until the mixture boils. Remove from heat.
Coat grill rack with cooking spray and heat grill to high. Thread the steak and veges onto skewers. Grill until steak is no longer pink. Serve with peanut sauce. (And probably rice.)
