Pork Stew for Rainy Day

Ingredients
- 3 tablespoons all-purpose flour
- 1 teaspoon salt and pepper
- 1 pound pork steak, trimmed, cut into 1-inch pieces, salted and peppered
- 2 tablespoons EVOO
- 2 1/4 cups water
- 3 sliced Slow Roasted Roma Tomatoes
- 2 cups cubed peeled red potatoes
- 2 medium (1 cup) carrots, sliced 1/2-inch
- 1 rib (1/2 cup) celery, sliced
- 2 zucchini's cubed
- 1 medium (1/2 cup) onion, chopped
- 1 T dried oregano leaves
- 1 T dried thyme
- 1 t ground cumin
- 1 t red pepper flakes
- 4 cloves garlic chopped
- 1 bay leaf
- Chopped fresh parsley to garnish
Preparation
Step 1
Put 2 tablesppons of flour in plastic bag and shake meat in flour. Place Oil in 4-quart saucepan; add pork. Cook over medium heat, stirring occasionally, until lightly browned (7 to 10 minutes). Add remaining 1/2 teaspoon salt, 2 cups water and all remaining ingredients except parsley. Cook over medium-high heat until mixture comes to a full boil (3 to 4 minutes). Reduce heat to low; continue cooking until vegetables are fork tender (30 to 40 minutes). Remove bay leaf.
If needed, combine remaining 1 tablespoon flour and remaining 1/4 cup water in small bowl. Stir into stew. Continue cooking, stirring occasionally, until slightly thickened (3 to 5 minutes). Adjust seasoning,garnish each serving with parsley, and serve w/ soudough bread and a glass of red wine, if desired.
