German Potato Salad

The first time I ate this Hazel Spencer made it.

Ingredients

  • 1/2 pound bacon (10-12 slices)
  • 1/2 cup onion (chopped)
  • 2 Tablespoons flour
  • 2 Tablespoons sugar
  • 1-1/2 teaspoons salt
  • 1/2 cup cider vinegar
  • 1 cup water
  • 6 cups sliced cooked potatoes

Preparation

Step 1

Cook bacon until crisp, drain and crumble. Save 1/4 cup
fat. Cook onion in the fat until tender. Blend in flour, sugar, salt, and pepper. Cook. Add vinegar, 1 cup water
. Cook and stir until thick and bubbly. Add bacon and potatoes; heat thoroughly.
