Chicken Tagine with Raisins (Darren from Okotoks)

Ingredients

  • 500 g chicken thighs, cubed
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 2 tsp turmeric
  • 2 Tbsp tomato paste
  • 3/4 cup dried prunes, halved*
  • 1 cup whole almonds
  • 1/4 - 1/2 cup liquid honey
  • 1 cup chicken stock
  • Salt and pepper to taste

Preparation

Step 1

Sauté meat, onions and garlic in a little oil. Add spices and continue cooking until meat is lightly browned and onions are translucent.

Add remaining ingredients to the meat mixture. Cover and simmer for one hour until the meat is tender.

Serve over a pile of steamed couscous, surrounded by vegetables -- carrots, turnips, zucchini, whatever you like.
Serves 4 to 6.

* Darren Nixon's options: Use half dried apricots, half prunes or raisins.
