CHICKEN CACCIATORE (Chatelaine)

Ingredients

  • chicken pieces
  • 2 tablespoons olive oil
  • salt and pepper
  • 1 medium onion chopped
  • 2 garlic cloves finely chopped
  • ½ cup of white wine (or red)
  • 1 tablespoon white vinegar
  • ½ cup of chicken bouillon
  • 1 398ml crushed tomatoes
  • 1 tablespoons of tomato paste
  • 1 teaspoon of sugar
  • 1 barquette mushroom
  • ½ cup of black olives
  • Basil

Preparation

Step 1

1. Preheat the oven at 350.
2. Warm olive oil, and sauté onions and garlic (crushed with basil).
3. Add chicken pieces, sprinkling with salt and pepper and cook for about 10 minutes.
4. Take out the pieces of chicken, add wine and vinegar and reduce to half.
5. Add bouillon and cook 2 minutes.
6. Add tomatoes, tomato paste and sugar.
7. Add salt and pepper and cook for 1 minute and add quartered mushrooms.
8. Return the chicken pieces, covered and cook in the oven for 50 minutes.
9. Add black olives and return to the oven for 10 minutes.
