Citrus Chicken Fajitas

Ingredients
- 3/4 cup low fat plain yogurt
- 2 tablespoons orange juice
- 1 tablespoon grated orange peel
- 2 teaspoons canola oil
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3/4 pound boneless skinless chicken breast meat, cut into strips
- 1 medium red bell pepper, seeded, deribbed and cut into strips
- 6 scallions, sliced
- 2 cloves garlic, pressed
- 4 (6-inch) whole wheat flour tortillas, warmed
Preparation
Step 1
In a medium bowl, combine yogurt, orange juice and orange peel; set aside. Heat the oil in a large skillet over medium-high heat; saute cumin and cayenne pepper for about 1 minute or until nice and fragrant (don’t let it burn). Add chicken strips, bell pepper, scallions and garlic; saute until chicken is cooked through, 6 to 8 minutes. Add yogurt mixture; toss to coat. Spoon chicken mixture evenly down the center of each warm tortilla, roll up and enjoy!
SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Use gluten free tortillas.
